Healthy Gluten Free Organic Valentines Cookies

These are the best oatmeal cookies made with old fashioned rolled oats....gluten free, healthy & great for letting kiddos "help" on days when you're stuck inside.

  • 1 cup organic raisins or organic cranberries

  • 2 1/4 cup gluten free flour

  • 1 tsp pink himalayan salt

  • 1/2 tsp baking soda

  • 1-1.5 tsp organic cinnamon

  • 3/4 tsp organic nutmeg

  • 1/8 tsp organic ground cloves or 1 drop clove essential oil

  • 1 cup grass fed organic butter, softened

  • 1 1/2 cup organic brown sugar, packed

  • 1 pastured raised organic egg (I added 4 & they were fluffy amazing goodness, add another 1/4 cup of GF flour)

  • 2 Tbsp filtered water

  • 2 cup gluten free organic old fashioned rolled oats

INSTRUCTIONS

1. Pour boiling water over raisins to cover; let stand 10 minutes and drain.

2. Mix flour, salt, baking soda, and spices. Add butter, sugar, egg, and water. Work with a wooden spoon until smooth. Stir in raisins and oats. Chill for at least one hour.

3. Roll out on floured surface to 1/4 inch. Cut with floured 3″ cutter. Sprinkle with with sugar. Bake on ungreased cookie sheets at 375 F for 10-12 minutes.
